Culinary School of Hard Knocks. FOH Manager for chain restaurants, turned executive chef of a few of them. Moved private exclusively in 2014 for Palm Beach Counties Elite. Continue to strive to learn something new everyday, and push my culinary knowledge constantly. Experimenting on all those who apply.
Food Philosophy
As close to Farm to Fork as possible. Not only is it healthier, most of the time more budget friendly, but it supports community. Not to mention, shopping from local markets, that are putting out their best crops/meats etc..connecting with the farmers who are providing, gives the ingredients a better flavor.

Chef Troy Sheller
Troy Sheller was raised in Traverse City, Michigan, steeped in the aromas and flavors of his mother’s and grandmother’s kitchens—his grandmother a second-generation Sicilian immigrant whose heritage left a lasting mark on his culinary soul. A self-taught chef with an unstoppable drive, Troy’s career has spanned over two decades, including multiple years as an executive chef and culinary consultant for numerous restaurant brands across the U.S.
His culinary journey took him to South Florida, where he launched a successful private chef and catering company that served Fortune 500 executives, political dignitaries, and celebrities including NHL Hall of Famer Henrik Lundquist, Michael Jordan, Kid Rock, and Rickie Fowler. His culinary style—bold, creative, and unbound by genre—has been shaped by legends like Jeremiah Tower and Thomas Keller, evident in dishes like his award-winning Crabmeat Cheesecake, a masterful fusion of ricotta cheesecake and crab cake.
Throughout his career, Troy has developed a reputation for making the impossible look effortless—whether curating Michelin-star plated experiences or crafting backyard BBQs, Hawaiian pig roasts, Vietnamese street taco bars, or elaborate Mediterranean feasts. His beverage pairing dinners—featuring local wines, craft brews, distilled spirits, or non-alcoholic pairings—are legendary and have become a signature offering for rehearsal dinners, reunions, anniversaries, and intimate celebrations.
In addition to his time in the kitchen, Chef Troy has provided consulting services for multiple restaurant concepts, helping shape menus, lead culinary teams, and elevate overall brand identity.
Now in a new season of life, Troy is intentionally shifting his focus. Driven by his faith and love for his family, he is pursuing a more balanced and meaningful path—one centered around home, his two children, his church family, and living a life led by Christ. While still deeply connected to the culinary world, his passion is now fueled by service, simplicity, and impact over accolades.
In 2017 alone, his culinary philanthropy raised over $50,000—and that spirit of giving continues today through mentorship, community dinners, and faith-based hospitality initiatives.
